QUICK MIDWEEK MEALS

Your stressed, tired and last thing on your mind is DINNER!!!! Here is a quick midweek tweak.

Put on a pot of salted water to boil, take frozen, yes frozen good quality meatballs, pour your self a glass of wine.

Next cut an onion into small chunks, add to an oven proof saute pan with about 2 tablespoons of olive oil in it, cook till transparent. Add 1/2 cup cream sherry, 2 tsp. beef base and and 2 cups half and half or heavy cream. Salt and pepper to taste. add fresh or dried Tarragon and the frozen meatballs, take the pan off of the stove and put it into a 400 degree oven……. by now the water should be boiling add egg noodles, cook , drain, toss with butter. Check on your meatballs, they should take no longer than 15 minutes top the noodles with the Sherried Meatballs.
